This naturally brewed Echigo miso is matured for about a year in a wooden vat. It is made from domestic soybeans, domestic rice and natural salt. It is a 100% koji rice miso that uses the same amount of rice as soybeans. Because it is naturally brewed, its color and flavor may vary slightly depending on when you buy it. Recommended for miso soups with a lot of ingredients, or when you want to emphasize the flavor of miso in a fine broth.
Miso contains yeasts that make it a living food: keep it in the refrigerator if you want to stop its fermentation, or keep it at room temperature if you want a stronger taste.
