A rice koji that reveals the natural sweetness of its ingredients: rice koji, salt, kelp and red pepper.
You can easily make pickled condiments by soaking vegetables such as aubergine or daikon radish in it. You can also marinate meat or fish in it for at least half a day and then grill it.
Store in a cool, dark place. After opening, store in the refrigerator and eat quickly.
About Hoshino Honten
Setaya, a town in Nagaoka, Niigata Prefecture, is an old town surrounded by rich nature. It was the domain of the shogunate during the Edo period (1603-1867), and due to the abundance of groundwater, miso, soy sauce and sake breweries have long flourished here. HOSHINO HONTEN established their brewery in 1846, at the end of the Edo period, and continued to produce miso and soy sauce characterized by their deep taste and aroma.
