This naturally brewed Echigo miso is matured for about a year in a wooden vat. It is made from domestic soybeans, domestic rice and natural salt. It is a 100% koji rice miso that uses the same amount of rice as soybeans. As it is naturally brewed, its colour and flavour may vary slightly depending on when you buy it. Recommended for miso soups with many ingredients, or when you want to emphasize the miso flavor in a fine broth.
Miso contains yeast which makes it a living food: keep it in the fridge if you want to stop its fermentation, or keep it at room temperature if you want a stronger taste.
Good to know: what is called “Echigo miso” is a light-coloured, smooth-textured, full-bodied miso made from rice koji and characterised by a good balance between saltiness and the refreshing sweetness and fragrance of the koji. The rice grains are visible in the miso as polished round rice is used.
About Momokawa Miso
Momokawa Miso was founded in 1941 by the grandmother of the current director and is located about 20 minutes’ walk from Niigata Station. The company brews miso in the traditional way in 20 wooden vats, each holding about 5 tons of miso.
