A long-time favourite in the shop, these delicious crackers are made without any chemical seasoning and are the result of a much more rigorous process than one might expect. In order to obtain the best rice paste, Sakurado insists on certain points:
– the rice is grown under contract in Niigata and stored at low temperatures in a special warehouse. The rice is only taken out of the warehouse immediately before the paste is made, so that it is not exposed to air unnecessarily, to avoid oxidation and to keep its taste.
– the rice is steamed as whole grains and then pounded with a pestle, a technique that prevents the rice paste from containing too many air bubbles and makes it uniform and firm.
– carefully selected ingredients, such as Ako salt, a sun-dried salt that has preserved its traditional taste since the 17th century.
