Using only Koshitanrei rice, the new sake rice developed by Niigata Prefecture, this Junmai Daiginjo sake is the result of all the know-how of Taiyo’s master brewers, and all the essential steps, such as the washing of the rice or the management of the steaming temperature, have been done by human hands. The result is a sake that combines the slightly fruity aroma of Ginjo sakes, a mellow taste that develops on the palate and a lingering finish that evokes the modest beauty typical of Japanese women in kimonos. Could this be the detail that won it a Gold Medal in the Sake category at the International Wine Challenge (IWC) in 2018?
About the Taiyo Brewery
Founded in 1945 by merging 14 local sake houses, Taiyo House includes sake houses that have been in operation since 1635, a history of which it is particularly proud and which it strives to honour by continuing this tradition unabated. As a result, Taiyo is the 10th largest producer of Ginjo Sake in the country, and has placed an early emphasis on food pairing, offering a range from premium sake to everyday table sake.
