Store in a cool, dark place. Sake does not have a use-by date, but we recommend that it be consumed within one month of purchase to get the most out of its flavours.
A Junmai sake made entirely from Takane nishiki rice – which is rarely grown in Niigata – and then carefully brewed with local Ginjo yeast. The result is a slightly fruity aroma, smoothness where the umami of the rice develops and a light finish that makes this sake balanced and perfectly suited to meals. It is this beautiful acidity combined with aromatic complexity that makes it a gateway to the world of sake.
Awarded a Gold Medal at the National Heated Sake Competition in 2018 and 2021, and a Grand Gold Medal in 2022, it goes without saying that this sake can be enjoyed from 8°C to 40°C.
It is an elegant accompaniment to mild dishes with light ingredients: fried octopus, salt-roasted Kuruma plum, crab or Siu Mai shrimp, sole meunière, white fish mousse, scallops steamed in wine, seafood salad, as well as light dishes with lemon or vinegar.
About the Taiyo Brewery
Founded in 1945 by merging 14 local sake houses, Taiyo House includes sake houses that have been in operation since 1635, a history of which it is particularly proud and which it strives to honour by continuing this tradition unabated. As a result, Taiyo is the 10th largest producer of Ginjo Sake in the country, and has placed an early emphasis on food pairing, offering a range from premium sake to everyday table sake.
