A Junmai sake designed as the standard-bearer of Niigata’s qualities: rice, water and know-how. The harmonious balance between the natural sweetness of the prefecture’s emblematic Gohyakumangoku rice and the subtle acidity of Junmai sakes, tinged with a slight bitterness, makes this an easy-to-match sake for any table.
A multiple award winner, including a Gold Medal in the “Delicious Sake in a Wine Glass” competition in 2014, 2019 and 2021, a Gold Medal for Heated Sake in 2016, and a Gold Medal at Kura Master 2017 in the Junmai category, this Tokubetsu Junmai sake is a wonderful accompaniment to dishes that are quite fatty or boiled, as well as dishes with spices, nuts, or brown sugar cubes: mackerel simmered in miso, yakitori skewers, dishes in teriyaki sauce, roast pork, sweet and sour pork, shrimp in chili sauce, or cabbage rolls, vegetable terrine, omelette and light dishes.
About the Taiyo Brewery
Founded in 1945 by merging 14 local sake houses, Taiyo House includes sake houses that have been in operation since 1635, a history of which it is particularly proud and which it strives to honour by continuing this tradition unabated. As a result, Taiyo is the 10th largest producer of Ginjo Sake in the country, and has placed an early emphasis on food pairing, offering a range from premium sake to everyday table sake.
