Uonuma’s main brand, covering a range from ordinary sake (futsushu) to Daiginjo, ‘Tenjinbayashi’ is originally a festive song that has long been sung in the Tsumari region. It is said that it was originally a ritual song to pray for a good rice harvest, so it is regularly sung on occasions such as the opening of a new sake brewery, during rice planting and other festivities. That’s why Tenjinbayashi sakes, brewed with water from the Uonuma mountain range – soft water with low mineral content that produces sake with a sweet and lively taste – are also used as celebration sakes.
This Junmai Ginjo sake made from Koshitanrei rice has a refined, sweet taste that is not unlike Uonuma’s own sakes, which emphasise the umami of rice.
About Uonuma House
Located in the southern part of Niigata Prefecture, Tokamachi City is one of the areas in Japan most prone to heavy snowfall. It is here that Uonuma has been brewing sake since 1873. Surrounded by mountains and the Shinano River, the region experiences 2-3m of snowfall in winter, which offers many advantages to the sake industry. Indeed, while the snow is a nuisance to those who live in the area, the stable low temperatures of the snow provide an optimal environment for the koji spores and yeasts that are essential for brewing sake. At the same time, this coldness prevents the growth of bacteria and produces a fine taste, as the snow allows the sake to ferment at low temperatures for a long time. Mr. Yamaguchi, the president of Uonuma, can’t say enough about his love for the sake rice and water of the region.
