Store in a cool, dark place. Sake does not have a use-by date, but we recommend that it be consumed within one month of purchase to get the most out of its flavours.
The brainchild of young director Ryuya Abe, this Junmai Daiginjo brewed from Miyama nishiki rice grown in Yamagata Prefecture has a sweet aroma, while its momentary fullness on the palate and short finish make it a standard accompaniment to meals.
Recommended dishes include potatoes with salted butter, flounder carpaccio and fish tartar, camembert and grilled fish in general.
Mineral and clean when enjoyed cold, this sake’s texture becomes mellow and tinged with the flavour of rice and a hint of acidity when slowly heated to 45°C.
About the Oujiman Brewery
When Ryuya Abe became a full-time employee of Tate-no-Kawa, he was given carte blanche and three years to take over the ailing sister brewery Oujiman. At 26, the young man decided to try as many options as possible, combining the enthusiasm of his youth with the experience of the existing brewmaster. The duo soon surrounded themselves with new young people from other professional fields, and this is how this heterogeneous team, driven by the demand for a unique taste and uncompromising quality, has succeeded for several years in fulfilling its ambitious mission!
