This wasabi of the Mazuma variety – the rolls of wasabi – grown in greenhouses to ensure a constant supply of pure water and low temperature variations throughout the year, was ground into a powder and then packaged as is, without the addition of any other ingredients.
The result is a 100% natural wasabi powder from an ideal environment in the Itoigawa region (Niigata Prefecture), which benefits from both the controlled temperatures provided by greenhouse cultivation and the clear, mineral-rich water naturally filtered through the volcanic ash layer of Mount Yakeyama, an active volcano at the northern end of the Northern Alps of Japan.
Wasabi’s distinctive aroma and pungency are vulnerable to heat, so here it is dried slowly at low temperatures to prevent its cell membrane from deteriorating due to frictional heat.
The result is a microscopic wasabi powder that allows the aroma, sweetness, pungency and colour of authentic Mazuma wasabi to come alive again simply by mixing the powder with water (1:1 ratio, then let stand for 7-10 minutes).
