In the Hasegawa family, it is said that the Settaya district (Nagaoka town, Niigata prefecture) was cleared by young people from the adjoining Nagano prefecture, often referred to as "Shinshu". In fact, the former name of the Hasegawa house was "Shinshuya". To evoke these roots, the house brewed this sake with Miyama Nishiki rice from Nagano Prefecture.
This Junmai Daiginjo sake has an elegant umami that develops in the mouth, with a refined taste that matches the rich and graceful aroma. A dry and dignified sake.
The heap of petals reminiscent of sake drops was designed by a designer who came to visit the Hasegawa house, based on the image of the warehouse.
About Miyama Nishiki rice
Among the emblematic sake rices grown in Japan in cold regions, Miyama Nishiki rice is ranked 3rd, behind the Yamada Nishiki and Gohyakumangoku varieties. Miyama Nishiki rice, with its good brewing ability and high resistance to cold, is grown mainly in Nagano Prefecture and the Tohoku region. Brewed sake made from Miyama Nishiki rice is of high quality, smooth and refreshing.
Characteristics: Although particularly rich, the fragrance is graceful and elegant. In the mouth, umami spreads instantly. A karakuchi that impresses with its power.

Founded by a samurai ancestor who settled in the province of Echigo (now Niigata Prefecture) in the 16th century, the Hasegawa Brewery was truly born in 1842, when it was one of five sake houses dedicated to gods authorized to brew, despite the famine that ravaged the country and made rice an exceptionally precious commodity. The authorization obtained to sell the sake that remained after the offerings constituted the commercial beginning of the Hasegawa Brewery, its master brewers taking since then the name of their predecessor as a sign of respect and perpetuation of a traditional production.
