Sublime and majestic, a Junmai Daiginjo sake with a pronounced umami and white peach flavor, to be enjoyed with the eyes as well, like a Japanese koi carp. Since its award at the Cannes Lions International Festival of Creativity, the design of its bottle has obtained trophies, because in the elaboration of this sake, visual pleasure has not been sacrificed to organoleptic pleasures.
The origin of the name "KOI" comes from the time when sake was not shipped in bottles, but in barrels. In those days, rice was obviously a precious commodity, and so was rice sake. Sake breweries that wanted to sell as much of their sake as possible would ship barrels that had been mixed with water to the drinking places, which would mix it a little more to make a profit, so that by the time the sake reached the customer's glass, it had become so diluted that goldfish could swim in it, hence the derogatory name "goldfish sake". Even at that time when Imayo Tsukasa still shipped in barrels - and of course still today - the sake produced by the brewery never underwent this practice, and thus its slogan remains as "Imayo Tsukasa does not make goldfish sake, but majestic Japanese koi carp sake". Moreover, the design of this bottle was also inspired by a Niigata custom of laying down a bottle of sake when you are done drinking it. As a lying bottle looks like a fish, it was enough of an incentive to give it the colors of the koi carp, more precisely the "Nishikigoi" variety from Niigata, in order to create the form of the fish. Do not hesitate to put down this bottle once drunk, to own and admire this Niigata carp too!
The Imayo Tsukasa Brewery
Founded in 1767, Imayo Tsukasa is located in the Nuttari district of Niigata City, an area known for its fermented food. Niigata was, along with Edo and Kyoto, one of the three great cities of Japan known for its pleasure districts, so the sake houses of Nuttari have always been in search of flavors that would find their way to the tables of the most prestigious restaurants. Imayo Tsukasa was the first in Niigata to brew sake without a single drop of added alcohol (Junmai style), an unusual technique even in Japan at that time, even after the war. Thanks to this brewing technique, the sake has both the umami typical of Junmai and a pleasant freshness, enhancing the flavour of your dishes and bringing the guests together.
