This umeshu is obtained by macerating selected Japanese green plums in a "genshu" sake (without adding water). It is the balance between the acidity and sweetness of Ume plums that gives this sake its rich taste.
It goes perfectly with cheese cake and Chinese food.
The Takano Brewery
Founded in 1899, the Takano Brewery brews its sake in an area of great natural beauty, where waterfowl fly all year round, due to the proximity of Sakata Pond, registered under the Ramsar Convention which protects wetlands that support birds. All Takano's sakes are fermented at low temperatures over a long period of time to produce sake that is smooth in the mouth. The brewery specializes in light, easy-drinking sakes that you can't get enough of.
