This junmai is typical of what "Niigata" offers best by highlighting all the benefits of sakamai, sake rice. This sake is an ordinary quality sake, produced only with rice, water and koji. The rice used must be polished to at least 70% of its original size, for a firm and powerful taste, both pure and well balanced. "Tokubetsu" means that the rice used for this sake is a special sake rice of superior quality. It's a dry sake.
A simple sake, easy to associate. A beautiful acidity, balanced by a light bitterness, makes it the ideal drink to accompany all kinds of dishes.

Taiyo Brewery

Founded in 1945 by merging 14 local sake breweries, the Taiyo Brewery includes them in operation since 1635, a history of which it is particularly proud and which it strives to honor by continuing this tradition unabated.  As the 10th largest producer of Ginjo sake in the country, Taiyo Sake Brewery has focused early on harmony with the kitchen, offering a range from premium sake to everyday table sake.
