This junmai ginjo is made with Takafune Nishiki, one of Niigata's 6 premium sake rice varieties.
This sake is representative of Niigata sake, and in the style of the Taiyo house. It is produced solely from rice, water and koji. The rice used must be polished to at least 60% of its original size, for a powerful taste, both pure and with a nice glimpse of the complexity that this type of sake can offer us.

The Taiyo Brewery
The result of the merger of 14 breweries in the Murakami region - some dating back to the 17th century - Taiyo was one of the first breweries to introduce Ginjo sake to the national repertoire.
